And Raffles Hotel Singapore, founded in 1887, is a favorite of writers, celebrities, royalty—and now, me.
Why It's Green:
Red White & Pure sources sustainable, natural herbs for their treatments; Annalakshmi serves only vegetarian cuisine, which leaves an exponentially smaller carbon footprint than meat-based menus; and Raffles Hotel Singapore runs an annual cleanup of the Siem Reap River in Cambodia, improving the lives of countless villagers, and has sponsored a Rainforest Foundation auction to raise funds for environmental work in valuable rainforests throughout Asia, Africa, Central and South America.

Delicious, Dreamy Singapore
If you've ever traveled around bustling Southeast Asia, then you know something about sensory overload. Packed streets, extremely foreign languages, and alternative views of sanitation and hygiene left even me, an adventurous traveler, looking for respite. In the midst of this cultural hubbub, Singapore, it turned out, was the perfect place to recharge my batteries.
After sinking into the world's most comfortable lounge chair at Red, White & Pure Spa, which specializes in traditional Chinese medicine, I felt my brain float away during an Ayurvedic scalp massage while sipping an ethereal vegetable consommá, infused with the blood-revitalizing herb Chuanxiong.
Later, at Annalakshmi, a gorgeous vegetarian restaurant where you pay whatever you wish and the profits are given to charity, I savored made-to-order thosai—lentil crêpes with stew for dipping. The day's end came to a rest in a cool, clean room (Somerset Maugham may have slept there), upon the most beautiful damask bed cover I've ever seen, at Raffles Hotel Singapore (top two images), leaving my senses thoroughly soothed. —Jay Weinstein
