Delicious, fresh, healthy snack food for kids that they help you make—why not prep all the ingredients beforehand and make assembling them a party activity? Here's the recipe:
Strawberry Salsa
Serves 12
3 to 4 small tomatoes, seeded and diced
1/2 pint strawberries, hulled and diced
1 cucumber, peeled, seeded and diced
1 red onion, diced
1 red bell pepper, diced
1 yellow or orange bell pepper, diced
1 15.5 ounce can black beans, drained and rinsed
1 8 ounce can corn, drained and rinsed
2 limes, juiced
1 cup fresh cilantro leaves
Extra virgin olive oil, about 1 tablespoon or to taste
Salt and pepper to taste
Corn tortilla chips (baked chips for a healthier option)
1. Combine tomatoes, strawberries, cucumber, red onion, and peppers in a medium mixing bowl.
2. Add the beans, corn, lime juice, and cilantro to the bowl and mix together gently.
