Many of the dishes and drinks on this section of the hotels' menus rival their surroundings in sensory decadence. No small feat, as anyone who's ever been to Chateau Lake Louise or the Fairmont Mayakoba knows.
Whether organic, biodynamic, or anointed by free-range incanting sheep (just kidding!), everything in the newly mandatory "Lifestyle Cuisine" section of any Fairmont menu has ecologically and/or socially redeeming value.
From the eco-chic hoteliers who brought you North America's only Loire-rivaling chateaux and wind-powered check-in computers comes a new food-and-beverage imperative that asks: Why pit local against luxurious when the two can coexist so yummily? "Lifestyle Cuisine," which—thanks to newly implemented standards—occupies about a quarter of every Fairmont menu, is code for locally grown, organic and/or biodynamic, ethically harvested, fairly traded fare that rocks your taste buds and Karma-meter in equal measure. Hands-on gourmands may want to consider this variation on the theme: Noah Bekofsky, executive chef of Aria at The Fairmont Chicago, is running a "Shop with the Chef" program all summer. On the last Wednesday of every month (through September), he'll take participating guests to the Chicago Green City Market, where he'll introduce them to the fresh and sustainable local produce crowd.
