Star Stuffing for Your Thanksgiving Table
Canterbury Organics Rosemary Sage stuffings
Featured item: NOV 12, 2007
Stuffing = Bread cubes + butter + onions + turkey juices = Delish! Good-quality, great-tasting stuffing in a box—now, that's convenience.
This stuffing (or dressing, as it's more delicately called) is made of organic ingredients and herbs.
Perhaps you ordered your responsibly-raised, Slow Food-approved, heritage turkey months ago in preparation for Thanksgiving. But whether your turkey is organic or ordinary, what are you going to do, fill this special-occasion bird with trans-fat and additive-laden supermarket stuffing? Heck no. Now you have green options, such as two brand-new Canterbury Organics offerings: Rosemary Sage Dressing Mix and Rosemary Sage Cornbread Dressing Mix. You supply the celery, onion, butter, optional eggs (from a local farm, preferably), and chicken broth; combine them with the mix, and pack it all inside the turkey before roasting. (If you are serving an already-cooked gobbler and need to make the stuffing solo, just add water to prevent it from drying up and bake in the oven.) Some testing notes: The bread cubes in the Rosemary Sage Dressing Mix are especially big and chunky so you may have to increase the chicken broth to dampen them sufficiently. Both of these are basic bread mixes so they're well suited to being customized with an infinite number of ingredients (try dried fruit, fresh fruit, sausage and/or mushrooms). While these mixes have a good, herbal flavor, they are devoid of salt and pepper so remember to add those essentials. Finally, according to several different Thanksgiving polls, stuffing consistently ranks as people's favorite side dish so either double up or steel yourself for your guests scraping their plates and giving you hungry looks.—Daryl Chen
