Asian Pears: Beauty Ranch, Lincoln, CA

Marilyn Williamson (right, with childhood friend Karen Basquin) organically grows 18 varieties of Asian pears, including this Shinseki, on a farm started in 1929 by her grandfather, a Japanese immigrant. Beauty Ranch was originally a plum orchard, but when cheap, uniform fruit flooded the market in the 1970's, Williamson's father decided to diversify and began selling their produce, including persimmons, berries and vegetables, at farmer's markets. The Shinseki is known for its crisp, clean, lemony flavor – more like an apple than a traditional European pear. "It quenches my thirst," said Williamson. The pears start out green and turn yellow as they ripen. Williamson says they're best eaten raw or sliced into chicken or tuna salad as a crunchy alternative to celery.
