Skip the Burger:

According to researchers at the University of Chicago, eating one less burger a week substantially lowers your greenhouse gas emissions, while switching to a vegetarian diet can reduce your carbon output by 1.5 tons. By comparison, trading in a standard sedan for a hybrid car cuts your carbon footprint by one ton.

Hay is for horses…and people

Sitting on shaded hay bales, visitors savored fresh cheese and ice cream and produce for sale at the marketplace just steps away, including rare heirloom varieties of apples, plums and grapes. They also enjoyed a view of the Victory Garden, as well as the mouthwatering smells of sustainably-sourced food prepared at open carts and people-watching with the likes of Alice Waters, Michael Pollan and Slow Food Movement founder Carlo Petrini strolling by.
