Sustainable French Restaurant
Why It's Good:
This gastronomic landmark – L'Etoile opened in 1976 – actually overlooks the farmer's market that surrounds the Wisconsin State Capitol building. During the summer, Chef Tory Miller, who bought the restaurant in 2005, can be seen pulling a wagon around the market filling it with fresh fruits and vegetables.
Why It's Green:
Beyond the farmer's market, the other food on L'Etoile's seasonal French-inspired menu is sourced from small sustainable farms located within 100 miles of the restaurant. Chef Miller even works with farmers to ensure he has local fare in the winter, too, filling chest freezers and sourcing preserved out-of-season vegetables and fruit.
