Orleans Method Vinegars
Why They're Good:
Katz & Company makes its gourmet vinegars using the Orleans Method, a technique that originated in Port Orleans, France, in the 17th century. Unlike modern vinegar production, in which grapes undergo a rapid forced fermentation and are flushed with oxygen, the Orleans Method leaves the grapes longer on the vine and then concentrates the vinegar slowly in oak barrels with an added "mother" culture — a secret family recipe.
Why They're Green:
Katz & Company ages its vinegar in oak barrels discarded by nearby wineries. It grows its grapes organically, makes wine and then makes vinegar, all in the same place, keeping its carbon footprint to a minimum. The company, which already makes certified-organic olive oil, is now working with organic trade and certification association CCOF to create standards for certified-organic vinegar.
