Honey-Glazed Sweet Potatoes Recipe

What's not to love about caramelized sweet potatoes oozing with honey goodness? It's a side dish so good, you could almost call it dessert.

Using local, readily available ingredients is the more eco-conscious way of cooking, and sweet potatoes are likely a seasonal staple of your local farmers' market.

Honey-Glazed Sweet Potatoes

This is a very easy sweet potato recipe with little bits of candied ginger that can be made ahead and even reheated in the microwave before serving to save valuable oven space on the big day. – Susie Quick

Serves 10 to 12

  • 8 medium sweet potatoes, peeled and sliced 1/2-inch thick
  • 4 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely minced candied ginger
  • 6 tablespoons butter, melted
  • 2 tablespoons brown sugar

1. Arrange the sliced sweet potatoes, in a buttered 4-quart baking dish.

2. Mix together the honey, lemon juice, candied ginger, and butter. Pour over the sweet potato mixture.

3. Cover and bake at 350° for 30 to 45 minutes, until sweet potatoes are tender and glazed. Sprinkle with brown sugar and place beneath the broiler 2 to 3 minutes until potatoes caramelize.
