Why They're Good:

While working on an organic farm, Jordan and Todd Champagne noticed how much of the food grown never made it to market, but ended up, instead, in the compost pile. "We did what any self-respecting farm couple would do — grabbed the canning pots and got busy," says Todd. Happy Girl pickles are made with hand-cut vegetables, spices and herbs, which are then fermented in a mixture of apple cider vinegar, filtered water and sea salt. The jars are cooked and then aged to bring out the best flavor. 

Why They're Green:

Happy Girl uses the freshest organic produce from nearby farms in Santa Cruz County — produce that might otherwise have gone uneaten. "I like to think we're 'food conservationists' and we're activists preserving the heirloom recipes," says Todd.
